Lamb has been making more appearances on my dinner plate this year, so it has been great to experiment with recipes to see what works well. I’ve quickly learned that you don’t need a whole lot to create a tasty meal when cooking lamb. With just a few ingredients, you can enjoy the earthy flavors this dish has to offer.     

If you are not a particularly seasoned chef, this is a perfect dish to make with a help of a companion. It does take a little more work and attention to ensure everything is done at the same time. While one person is tending to the steak and sauce, the other can work on the asparagus, or with a little patience you can do it all yourself!

Ingredients

  • 2 bone in lamb leg steaks
  • 4-8 oz Morels, or combination of Morels and Bellas
  • 1 tablespoon cooking oil (I use bacon grease)
  • 1 small shallot or 1/4 large white onion
  • 1 clove garlic
  • 1/2 bunch of Asparagus
  • 3-4 strips of bacon
  • 1 pinch rosemary
  • 1 pinch thyme
  • 1 pinch nutmeg
  • 1 tablespoon brandy or cognac
  • 2 tablespoons greek yogurt
  • 3 tablespoons heavy cream or milk alternative
  • Salt and pepper

Instructions

  1. Prep your morels and shallots by thinly slicing, leaving a few morels whole as garnish. Mince garlic. Wash and trim asparagus.
  2. Bring your cooking oil to a high heat, and season your lamb steaks with salt and pepper and cook both sides until seared. About 7 minutes total. Remove from skillet, and wrap in tin foil to rest.
  3. Add more cooking oil if needed to your skillet and sauté morels until soft, about 4-6 minutes. Add shallot or onion and garlic, continuing to cook until soft, about an additional 2 minutes.
  4. Reduce heat, add brandy, and simmer until slightly reduced. Add greek yogurt and heavy cream or milk alternative and simmer for 12 minutes until thick. Add pinch of nutmeg, thyme, rosemary, and salt and pepper to taste.
  5. While the sauce is cooking, in a separate pan cook bacon to your liking. Remove from heat and chop when cooled. Return to pan with asparagus. Cook until soft, about 15 minutes.
  6. Add lamb back to skillet and simmer for 4-6 minutes.
  7. Plate and serve with garnish
