Lobster mushrooms can be most easily spotted by their striking orange-red coloring on the underside. The cratered upper surface presents a very different appearance which seems to contradict this mushroom’s designation as a choice edible.

It is important to check the mushroom for firmness. They can be quite soft and rotten on the interior and still look perfect on the outside. I no longer take anything that isn’t firm throughout.
