Fried Stuffed Morels

Morels are a king of the mushroom world. They are one of the most sought after and expensive ingredients, yet when you come across them on your hikes or hunts, you may be left wondering how to introduce them into your meals. Fried stuffed morels are an easy, customizable dish that is great for a snack or as an appetizer.
For my fried stuffed morels I used a vegan cream cheese and imitation crab, but these can absolutely be made with your favorite type of cheese, meat, and vegetables. Other combinations I recommend include jalapeños and cream cheese if you like spice, cheddar and bacon if you’re feeling salty and savory, or even garlic, spinach, and ricotta if you want a treat that is subtly sweet. No matter what you he process will be similar to the recipe below.

Ingredients
- Handful of large, unbroken morels
- 1/2 cup cream cheese
- 1/2 cup imitation crab
- 1-2 eggs
- 1 cup flour
- 1/4 teaspoon salt and pepper
- 1/4 cup chopped green onion
- 1/2 teaspoon Worcestershire
- 2 cups frying oil peanut or canola oil
Instructions
- Slice the stalks from the morels, leaving just the caps.
- In a bowl mix cream cheese, imitation crab, green onion, and Worcestershire.
- Stuff the morels with filling. An easy way to do this is by putting the filling into a plastic bag, and snipping a corner, similar to a piping bag.
- Whisk egg in one bowl, and flour, salt and pepper in another.
- Begin to heat your oil in a deep pan or medium pot. You will know that it is ready if when you drop in a single drop of water, the oil pops.
- With chopsticks or a fork, roll each stuffed morel in flour mixture, egg, then flour again.
- Fry each morel in heated oil, turning if needed until golden, about 5 minutes each.
- Pat excess grease off with paper towel, serve and enjoy!
